Azuki bean is a red soybean variety originating from Asia. These beans have a slight hazelnut taste. They are sweeter but also less mealy.

In the West, they are consumed in salty dishes as well as vegetables, whereas in Asia, they are more often consumed as desserts (they can be turned into a sweet paste for example or simply served as is.).

In Japan, it is often served during weddings and birthdays, or as balls during New Year's Day.
