To create this mustard with mushrooms and smoked tea, Fallot worked with a great name in French gastronomy, Patrick Bertron, the leader of the Relais Bernard Loiseau.

The smoked tea flavor associated with the undergrowth of cep intensifies the side of the autumnal mustard. This mustard is perfect with a piece of beef, game (wild boar or deer for example), poultry (guinea ,...) or smoked fish . It can also be incorporated into a mayonnaise to make it unique
