Soak 1 cup of chick peas the night before, rinse out the next day then boil in a heavy saucepan with 3 cups of water until tender. Finely chop 2 cups of fresh baby spinach and set aside. Pour a jar of Anila’s Hot Methi curry sauce in a saucepan and add the cooked chickpeas together with 1 cup of the remaining water. Cook until the sauce has thickened. Finally add the chopped spinach until wilted and soaked into the sauce. Garnish with fresh coriander and wedges of tomatoes and serve with chappaties or naan bread.
