Pesto Rosso is a variation of traditional Pesto verde in which a part of basil is replaced by dried tomatoes.

In this recipe, Nonna Bella pesto is much less salty than a traditional Pesto Rosso. This can be explained by the fact that a tomato sauce is used to replace dried tomatoes. The whole sauce is much sweeter and very much perfumed.
