	The Abondance is distinguished by a pressed cheese paste mid-cooked ivory to pale yellow in colour and its amber crust with jute canvas brand. Its texture is soft and creamy without being rubbery. Ripening must last at least 100 days but the more the cheese is aged, the more its taste is frank, typical and characteristic of Abondance
 History
 the Abondance name comes from the name of the capital where the market was held, located in the region of Thonon-les-Bains in Haute-Savoie. This Savoie cheese is made with whole milk from cows of the breed called"Abondance"then coagulated very slowly at a temperature of 27 ° C. PDO since 1990.
