For this Piquillo Peppers Marmalade, the whole Piquillos are grilled, then hulled and hand-washed, before being reduce in a purée. Only 22% of the sugar and of the apple pectin are added. It is then cooked over low heat. This marmalade, poor in sugar, will be delicious served along multiple sweet or salty dish…This gourmet specialty, based on Piquillos, can replace quince paste or black cherry marmalade to be eaten with hard and semi-hard cheeses, and will be delicious with semi-cooked or braised Foie Gras. It can replace onion marmalade or chutney, and melts on magret or ribs.
