Ramon Peña buys its albacore tuna in the hall of Burela when the albacore season begins. Their belly, the tastiest part behind the head in the bottom of the fish is then extracted, cleaned and cooked. The fat content of the belly gives it a delicate flavour. Cook it with grilled vegetables!
