Veal Juice is the result of a long and slow cooking, with a short time in the oven to caramelize the bones, followed by filtration to obtain a juice. The juice is then accompanied by caramelized onions.

Its use is simple: to sublimate meat by providing tasty element on the plate. The juice is drawn last in the plate for its taste and aesthetics.
