Created in 1950, the Shinmei company quickly became one of the leaders on the high quality rice market in Japan.

Before cooking it, put this rice in a strainer, dip it in a big salad bowl and stir it well. Get rid of the milky water and keep rinsing the rice with running water until the water getting out of the strained is clear. Let it wring for 30 minutes.

Pour the rice in a saucepan, not getting past a layer of 2 centimeters of rice (if the saucepan is too small, and the rice layer is too thick, the cooking will not be homogeneous).

Pour 12 cl of water for 100g of rice then let it rest for 30 minutes.

Cover and put on medium to high heat. Keep an eye on it until boiling, then lower the heat and let it cook for 10 minutes.

Take it out of the heat and let it rest 5 more minutes taking out the cover, it will let it finish to cook softly.
