The Indians see it as the queen of spices. Cardamom is native to the hills overlooking the plains of Kerala and the Malabar Coast in southwestern India. It is a plant of the ginger family, that is to say, a close relative of ginger, turmeric and Guinea pepper. It is now cultivated in Cambodia, Vietnam, Sri Lanka and of course in India. The cardamom seeds are enveloped in a green capsule that grows on the roots of the plant. These fruits are carefully picked by hand and dried in the sun. These dark green seeds contained in the capsule are powerfully aromatic with floral notes and a record of very fresh lemon and mint evoking eucalyptus. It takes about 40,000 of these seeds to get a kilo of spices. They are used traditionally in India for making pastries and they are part of many spice mixtures. In the middle-east, green cardamom is even used in coffee.

To use it, open the green pod, remove seeds (from 10 to 15 by pod) and crush them in a mortar or with a coffee grinder. Seeds pass badly in the pepper mill. Green cardamom is adequate with eggplant, carrot, gourd and cucumber. It matches ideally with lamb, poultry, pigeon, duck and quite particularly the guinea fowl. It is perfect with rollmops and marinated herrings. It will give an exotic touch to your compotes, fruit salads, sorbets of citrus fruits and will emphasize your pineapple-based preparations.
