Nutmeg is the heart of a fruit as big as an apricot. The walnut shell, yellow or red is called Mace. The grated nuts and mace are used in the same way. The flavor of nutmeg is extremely aromatic, hot and spicy. Mace is less aromatic but more subtle.

In a classic way the nutmeg is used (grated) with potatoes, béchamel, cheese soufflés, omelets, gingerbread and apple pie. In a more original way you can associate it with lamb and the goat cheeses.
The mace will marry elegantly to foie gras, endives and certain fruits as the banana, the melon and the pear. It is also ideal in the macerations. For optimal results, slice it in small strip before use.
