For this mixture of mushrooms, Emilio Oliveri withheld moss mushrooms, chanterelles, milk caps and pholiota.

These mixed mushrooms are processed according to a recipe handed down from generations: they are reduced in vinegar and white wine, after which is added a mixture of spices whose composition is jealously kept. Once this is done, they are put in jars and drowned in olive oil. These delicate tasting mixed mushrooms will nicely embellish your plates of antipasti.
