Widely known as the Périgord truffle, the black truffle is considered to be one of the world’s finest delicacies, valued for its powerful yet subtle flavours. It acquired its present cachet back when Brillat-Savarin described it as the diamond of the kitchen. When mashed, the black truffle will brilliantly accompany a potato purée, and also enhance a “Périgourdine” sauce or boiled eggs.
