A fruit of exception
Originally from Brazil or India, the cashew nut is growing in these two parts of the world where you can find the most beautiful shapes and sizes.
Cashew nuts from India and Brazil are recognizable by their size advantage and generous curves. They have a delicate taste halfway between hazelnut and pistachio with a soft texture and crisp.
The cashew nut is one of the lesser fat nut. Latter consisting mainly of unsaturated fatty acids and mono-unsaturated oleic acid. It also has a vitamin content (vitamins B and C), minerals (magnesium, phosphorus and potassium) and proteins not negligible.
A bit of history
Discovered in Brazil by the Portuguese, the cashew has been exported by them in Africa and in the state of Kerala in India before reaching other parts of Asia.
Called Heart head down, the nut which is the true fruit is indeed in the cashew apple which looks like a heart upside down.
The cashew is highly regarded within the medical Indian tradition. Its benefits are described in Ayurveda, which is an ancient Indian medical system over 3000 years old and based on philosophical principles. Nuts are described in this encyclopedia as a tonic, rejuvenating and stimulating appetite.
